Creamy, dreamy pasta! Yes, this sums it up pretty nicely. Today I am presenting you with the best dairy-free Alfredo sauce recipe that I’ve ever made!

This healthy Alfredo sauce is also perfect as a meal-prep option for a wholesome, delicious lunch, or dinner. It can be served with pasta ( I served it with spinach and home-dried tomatoes ) however, you could also serve this sauce with spiralized zucchini or carrot instead, for a low-carb version.

WHAT IS ALFREDO SAUCE?

Traditionally, Alfredo sauce (i.e. Fettuccine Alfredo) is a dairy-filled Italian pasta dish. The main ingredients include butter and cheese, which then became butter, cream, and cheese when it was popularized in America and other parts of the world. The result is a rich, decadent (but fairly unhealthy) sauce.

This Vegan version, however, is a lot healthier, a lot easier to make, and so delicious!

What makes this sauce so creamy?

Cashew Nuts!
Then, with a bit of garlic and nutritional yeast flakes – we achieve the perfect creamy cheesy flavor!
To make a pasta dish with the sauce, simply add the sauce to your cooked pasta, add desired veggies, and cook on the hob for a few minutes. The sauce will also thicken!

Ingredients
  

  • 2/3 cup/ Cashew nuts/100g
  • 1/2 cup/118 Dairy-free milk (I used
  • almond milk)
  • 2 cloves Garlic
  • 2 Tbsp Nutritional yeast
  • 1/2 tsp Nutmeg
  • 1 tsp Salt
  • Optional add-ins:
  • spinach wilted
  • Pepper to taste
  • roasted cherry tomatoes
  • mushrooms cooked

Instructions
 

  • Soak cashew nuts in hot water for 5 minutes.
  • Add soaked cashew, dairy-free milk, garlic, nutritional yeast, nutmeg, salt, and pepper to a high power blender and blend them until smooth.
  • You can serve the sauce right away. If you pour it on pasta and veggies and warm them together in a frying pan, the alfredo sauce will thicken and warm through.

Notes

The blended Alfredo sauce can be stored in the fridge for up to 3 days, and it can be frozen.
