Today – I am going to show you my quick & easy 20 Vegan Meal Prep Recipes.
Why is meal prep important?
You can find a lot more information here, but I will summarise it for you.
As a vegan especially, it can be a bit difficult eating out, or even if you do, there is always a chance that someone might stick some meat product in your sandwich, or your barista forgets to put dairy-free milk when you’ve asked them.
When you cook at home and meal prep you – You know exactly what goes into your food! Also, you can save money, eat healthier, and so many more reasons why you start meal prepping/planning!
Okay, maybe not the healthiest breakfast, but making these beauties ahead and having a quick-grab-to-go breakfast, can definitely be tempting.
They taste delicious and are not so bad for you after all. There’s blueberries in there, sooooo….
2. Overnight Chocolate Oat & Almond Smoothie
Okay, now we are back at the healthy stuff… But is chocolate for breakfast acceptable? It certainly is in my diet! Once you try it – no turning back.
This smoothie is thick and delicious, comes out in 5 minutes in the morning.
You got a banana, almonds, cacao, and a drop of vanilla in there. That’s it!
Doughnuts? What the heck? Hear me out – these are more like Samoas, but putting a hole in the middle of them, makes them a doughnut in my dictionary.
These bad boys are high in protein and are SUPER EASY TO MAKE!
I mean, it wouldn’t be a vegan meal prep if I don’t include the classic overnight oats. Again – we are having chocolate for breakfast…but why not? IS there a rule somewhere that says no chocolate for breakfast? I mean if you can have leftover pizza for breakfast, surely chocolate for breakfast isn’t so bad!
Now, if you like a sweet note in your food, you are going to love this salad. This salad is so filling and so delicious.
Made out of real food and ingredients only – the star of the dish is the pomegranate. The bitterness of the tahini is perfectly balanced with the sweetness of the pomegranate. And the mint in there will refresh your palate. There is loads going on in this salad – but everything works so well together.
Juice noodles packed for lunch at work? -YES PLEASE! These noodles will make your day! Sweet and sour thing going on in there, that’s gonna challenge your tastebuds!
Make a big batch of these, and have them for lunch and dinner. Why not.
AH…this soup….thick, smooth, and velvety. It has the taste of Christmas. Absolutely delicious, light, and making a big batch of it will be a piece of cake.
Top with croutons if you like and eat it hor or cold.
This dhal is super quick and yummy. Why not take some delicious dhal for your lunch and soak it with some naan?
All the magic happens in one pot – which means almost NO WASHING! A win-win!
MMMM…Green, raw healthy pea hummus for an afternoon snack dipped with some cucumbers? That’s definitely going to make you feel healthy ASF!
We are going in raw…Another raw recipe, a delicious pop-in-the-mouth bite. Super quick snack when you don’t have time to ‘dip’ into a hummus. Only 5 ingredients here and the food processor does all the job for you. Well, you are gonna have to roll some balls, but heck, that should be fun? 😀

Seriously, when you try this chocolate fudge loaf..man, you are going to be coming back for me! I couldn’t resist just eating one slice when I baked it, oh well!
Perfect with some almond butter on top, or just eaten on its own with a hot cup of tea.

These brownies, believe it or not, are healthy, and oh man…soo YUM!
