Easy Gluten-Free Vegan Skillet Chocolate Chip Cookie

The best part about this Easy Gluten-Free Vegan Skillet Chocolate Chip Cookie is that it’s not only gluten-free but also dairy-free and refined sugar-free as well. And it’s actually a tiny bit on the healthy side, so don’t feel too guilty when you dig into this yummy chocolate chip cookie dough.


Have you ever had a skillet cookie? If you haven’t, I think it’s about high time that you give it a shot. I hadn’t had one before, but I had a hankering for cookies and felt like I wanted to stray from my standard I hopped on Insta and bam there it was. Cookies in a cast-iron skillet. Day made.

The beauty of a skillet cookie is that it’s basically like a cookie pie. A giant chocolate chip cookie that you can slice like a pie or share like a pie. And you can top it with ice cream. And it’s absolutely delicious!

So today we’re making my new cookie obsession: a gluten-free skillet chocolate chip cookie that’s gooey, gooey and delicious!

Easy Gluten-Free Vegan Skillet Chocolate Chip Cookie

I know, I know, this is supposed to be a healthy food blog, but I couldn’t resist making this chocolate chip cookie, but you have to give me some credit for at least attempting to make it slightly healthier!!
Okay, it’s not healthy, but we are allowed a little bit of treat now and again!

Let’s get baking, shall we?


1/4 cup/55g dark brown sugar, or coconut sugar

1/4 cup/ 55ml softened coconut oil or sunflower oil

2 tablespoons of flax seeds ( this is basically, 2 tablespoons of ground flaxseeds, mixed together with 4 tablespoons of water, it acts as a binding agent, a vegan replacement for an egg)

1/3 cup/ 113g of maple syrup

1 1/2 cups/170g of almond flour

1/2 cup/50g of brown rice flour

1/4 cup/25g arrowroot starch or corn starch

1/2 teaspoon sea salt

1/2 cup/ 80g of vegan dark chocolate chips


1. Preheat the oven to 350 degrees F/ 180C and spray an ovenproof skillet with cooking spray.

2. In a large mixing bowl, beat together the sugar and oil. Once fluffy, beat in the flax eggs and maple syrup until smooth.

3. Add the remaining ingredients (minus the chocolate chips) and beat together to form a thick cookie dough. Fold in the chocolate chips.

4. Transfer the cookie dough to the skillet and press it down so that it spreads out evenly in the pan.

5. Bake for 18 – 20 minutes, or until lightly browned and still slightly soft. Cool slightly, then top with a scoop of vegan vanilla ice cream (optional but delicious) and enjoy!
