Easy Healthy Oil-Free Fajita Vegetable Filling

This Easy Healthy Oil-Free Fajita Vegetable Filling is perfect for meal prep, super easy to make, and can be thrown in the oven in no time. You can do anything you like with this traybake; season it as you like, add oil if you like…anything to your taste and preference!

Fajitas have got to be one of the best dinners there is – you can pretty much use whatever veggies you have in the fridge, they’re full of flavor and spice, and they couldn’t be easier to make.

If you don’t like tortillas, or you can’t eat bread, or you just don’t have any in the house, don’t feel you have to miss out on making fajitas!  You can simply serve these veggies on a pile of rice rather than wrapped in a tortilla. Add some beans, avocado if you like and you have a complete fajita bowl!

You don’t even have to use these veggies for fajitas, you can simply use them as a side to any dish you like or make your own complete meal by adding, tofu, chickpeas, fresh vegetables, hummus…anything!

Ingredients
  

  • 2 medium-sized sweet potatoes cut into fries
  • 2 small red onions sliced
  • 2 red peppers or any color you like sliced
  • 1/2 tbsp cayenne pepper
  • 1/2 tbsp paprika
  • 1/2 tbsp cumin
  • 1/2 tbsp garlic powder
  • 1/2 tbsp salt optional

Instructions
 

  • Heat the oven to 200C(392F). Mix all the spices with the sweet potato and roast in the oven for 15 minutes. Push the sweet potato fries on the side and add the sliced peppers and onions. Add the same amount of spices to the peppers and onions and bake for 15 minutes.

Notes

Store the cooled leftovers in an airtight container in the fridge for up to 3 days, and freeze for up to a month.
