Who doesn’t like fajitas? Come on. It’s a quick, delicious simple meal that takes almost no time to throw in.
You don’t even have to use these veggies for fajitas, you can simply use them as a side to any dish you like or make your own complete meal by adding, tofu, chickpeas, fresh vegetables, hummus…anything!
How To Make Vegan Fajita Filling:
Easy! just cut some veggies, add some spices and roast ’em. The way you assemble them, or eat that filling is entirely up to you.

Easy Healthy Oil-Free Fajita Vegetable Filling
- 2 medium-sized sweet potatoes cut into fries
- 2 small red onions sliced
- 2 red peppers or any color you like sliced
- 1/2 tbsp cayenne pepper
- 1/2 tbsp paprika
- 1/2 tbsp cumin
- 1/2 tbsp garlic powder
- 1/2 tbsp salt optional
- Heat the oven to 200C(392F). Mix all the spices with the sweet potato and roast in the oven for 15 minutes. Push the sweet potato fries on the side and add the sliced peppers and onions. Add the same amount of spices to the peppers and onions and bake for 15 minutes.
