Easy Tropical Chia Seed Pudding

Easy Tropical Chia Seed Pudding – that’s naturally sweetened using mango, is super healthy, and packs a good dose of fiber and protein.
Only a handful of ingredients are needed too. Also, it literally takes 5 minutes to make!

I like to keep things as natural as possible, especially when it comes to sweetening things. I don’t mind using maple syrup here and there, but I generally aim to sweeten desserts using fresh or dried fruit as much as I can.
Date syrup is another good option. This delicious mango chia seed pudding isn’t too sweet, but it was definitely sweet enough for me. If you do like a little bit more sweetness, feel free to add a tablespoon or two of maple syrup.

Basically, fresh mango is blended with coconut milk and cinnamon. The chia seed is folded into the ground coconut and mango puree. Then you pour the pudding onto your desired serving dish. I used a serving glass.
What’s really good about this coconut mango chia seed pudding, is that it can be eaten for breakfast, in the afternoon as a snack, or even for a dessert after a meal!

How To Make Chia Seed Pudding:

For this specific recipe, you will need:

1. Fresh Mango
2. Coconut Milk
3. Chia Seeds
4. Cinnamon

Chia seeds act as the binding agent. When they are exposed to liquid, the chia seeds start to gel. So, basically, you can add any flavored liquids, sweeteners, as you like. As long as you get the right proportion of chia seeds to liquid, you should end up with a winning chia seed pudding.  In this recipe, I have provided you with the right proportion and the correct ratio to liquid and chia seeds, so no need to worry about this, in this specific recipe.

Ingredients
  

  • 1/2 cup/110ml of coconut milk
  • 1/2 cup/85 of diced mango
  • 1/3 tsp of cinnamon
  • 1 1/2 tbsp of chia seeds

Instructions
 

  • Add the coconut milk, mango, and cinnamon to a blender and blitz for a minute.
  • Mix the chia seeds with the mango liquid in a bowl.
  • Pour the chia pudding onto your desired serving dish, and put it in the fridge for a minimum of 4 hours for the pudding to set.
  • Add your desired toppings and enjoy!

Notes

Consume the chia pudding within 2 days.
