These Healthy Chewy Peanut Butter Cookies are delicious, filling and healthy. They are perfect for a quick energy boost, perhaps for your pre-workout, for a quick healthy snack in the afternoon when you are feeling sluggish. They are also ideal for your kids, they taste delicious, so they will never know its actually healthy!
Peanut butter can be a healthy addition to your diet if consumed in moderation of course. Peanut Butter is high on protein, fiber, and many key vitamins and minerals.
There are a lot of peanut butter cookies recipes around, so I have put a twist on these and put coconut, but if you don’t like coconut it’s perfectly fine to replace it with oats for example. I also used crunchy peanut butter, because I like crunchy things, haha, but it’s fine with smooth peanut butter. You can also add different nut butter, like almond, cashew or hazelnut. You can play a lot with this recipe, you can add chocolate chips to it, dried fruit, anything you fancy.

1/2 cup/ 125g of peanut butter, no added sugar, no added oil (it’s healthier this way. if the only ingredient is peanuts) But you can easily make your own, it’s super easy –> How To Make Nut Butters
1/4 cup/ 85g of maple syrup or brown rice syrup for low fructose.
1/2 cup: 60g of almond flour
1/4 cup/ 30g of coconut flour or desiccated coconut for extra texture
1/3 cup/ 80g of vegan dark chocolate chips
1. In a medium mixing bowl, stir in the peanut butter with maple syrup until creamy and consistent.
2. Stir in almond flour and coconut. Use a spoon at first, then knead the dough with your hands to form a cookie dough ball. Divide the ball into 5-6 medium-sized cookies balls and place each ball onto the prepared lined baking tray, leaving 1 thumb space between each ball. The cookies don’t expand while baking.
3. Preheat oven to 180C (350F). Using a fork, or simply your hands and press the cookie balls and shape cookies. Don’t press too hard or the cookies crumble on the sides. If so, use your hands to smooth sides.
4. Bake for 12-15 minutes or until the top and sides of the cookies are golden brown. Slide a spatula under each cookie to transfer them onto a cooling rack. Cool for 1 hour before eating. The cookies are slightly soft when out of the oven and get hard and crunchy after they cool down.
Store these Healthy Chewy Peanut Butter Cookies in an air-tight container for up to 3 days.
