This Healthy Granola recipe is not so difficult to make, and it will last you for quite a while!

Ingredients:

350 of Rolled Oats

60g of Sunflower Seeds

50g of  diced up Pecan Nuts

55g of Pumpkin Seeds

150g of Flaked Almonds

50g of Coconut Flakes

150 of Dried Cranberries

2 teaspoons of Cinnamon

160g of Maple Syrup

2 teaspoons of Vanilla extract

2 tablespoons of Sunflower Oil

Method:

1. Preheat oven to 150c.
Mix all the ingredients together in a mixing bowl except the cranberries and the coconut flakes.
Transfer into a baking tray and cook in the oven for about 30 minutes. Make sure you stir the mixture every 10 minutes, so the top doesn’t burn and it cooks evenly.

2. After 30 minutes, add the coconut flakes and the cranberries onto the baking tray, and bake for further 15 minutes stirring it once half-way through the baking.
Once you take the tray out of the oven, make sure you transfer the mixture in a jar or a cold mixing bowl, so you stop the cooking and avoiding it sticking to the bottom of the tray.
Leave to cool before completely covering it.

Note: It’s perfectly fine if you can’t find coconut flakes, you can just use desiccated coconut instead!
