Now these Healthy Potato And Brussels Sprout Dipping Tots are so delicious and easy to make!
You can replace the Brussels sprouts with any vegetable you like really, from broccoli to kale or even peas!
We have a similar recipe made with broccoli ( Healthy Dippy Broccoli Tots ), but the reason why I made these with brussels sprouts, is because its the festive period! At least in the UK, brussels sprouts are eaten at Christmas!

Makes about 12 medium-sized tots
Each tot, if shaped into 12 contains approximately 52 cal
400g of peeled and diced potatoes
200g of Brussels Sprouts
2 medium-sized shallot or white onions s, peeled and diced as finely as possible
4 cloves of garlic, peeled and minced
1 teaspoon of cumin
Freshly ground black pepper
1. Boil the sprouts and potatoes until just cooked and soft not mushy. Strain, and leave them to cool.
2. While the potatoes are cooling, cook the diced shallots until soft with some oil in a pan. Add the garlic to the shallots and cook for 1 more minute.
3. Grate the potatoes and sprouts and put them in a mixing bowl. Add the onion mixture to the potatoes and add the salt and pepper to taste.
4. Mix everything together, and shape your tots. They should easily be formed and hold their shape. Place the tots on a lined baking tray with parchment paper, and brush them with some olive oil. Bake for about 35 minutes or until crispy on the top in a preheated oven on 200c.
Serve these Healthy Potato And Brussels Sprout Dipping Tots with your favorite dipping sauce, or simply serve them as a garnish to your main meal!
