Healthy Soft Vegan Fig And Nut Bars

So these Healthy Soft Vegan Fig And Nut Bars are so delicious and healthy! They are so nutty and just the smell of cinnamon coming when you bake them is absolutely irresistible! I love them!
They are the perfect breakfast bar, post-workout bar, afternoon snack, or suitable to be eaten throughout the whole day! They are very versatile.

Now I used dried figs because I want to be a bit different, dates are way too overused in recipes like this, because they help ‘bind’ the ingredients, but other dried fruit does too! So I added figs, and they still did the same job and gave it a little different flavor than the standard dates.
Also, figs are a lot less sweet than dates, which I guess makes them slightly healthier for people who are watching their sugar intake.

Just be careful with the figs, once you soak them in hot water to soften, please make sure you take the stems off because there is nothing worse than biting into this yummy bars and having to chew on a hard fig stem!
But sure, if you like dates or have dates, simply use dates to make this recipe!

It’s really simple and quick to make these, all you need is:

Mixed nuts of your choice, I used pecans, almonds, and walnuts!

Maple syrup

Dried fruit, dates or figs


Vanilla extract

That’s it! Only 5 ingredients.
Now, you can either chop the nuts into small pieces or be lazy (like me) and simply add them to a high-speed blender or a food processor and pulse them for a few seconds, which should break them a bit! Job done.

I did the same with the figs, pulsed them for few seconds and it broke them to almost a purée, which helped bind everything evenly. Simply combine the ingredients, press them down on a lined tin, and bake for about 16-20 minutes. I baked it on an 8” cake tin because I wanted to cut out slices, rather than squares, but the shape of them is entirely up to you!

230g of chopped pecans

115g  of chopped walnuts

115g  of chopped almonds

20 dates finely chopped or whizzed in a blender ( or dried figs soaked 10 minutes in hot water and stems removed)

100ml of maple syrup

2 teaspoons of cinnamon

1 1/2 teaspoons of vanilla extract


Preheat the oven to 185c.
1. In a large bowl, mix together all of the ingredients.

2. Line a pan of your choice with parchment paper. Press the nut mixture into the bottom of the pan.

3. Bake in the oven for 20- 25 minutes. Allow the bars to cool for about 30 minutes, then remove them from the pan. Use a pizza cutter to slice the bars into rectangles or any shape and size you’d like.

Store these yummy Healthy Soft Vegan Fig And Nut Bars in the fridge if you want them to last longer and for them to be a bit harder. They tend to be a bit soft and chewy if left at room temperature, so it’s entirely up to you how you like to eat them.
