Incredible 2-Ingredient Tortillas that can be done in minutes, and are so yummy, and can be used in many ways!

I used to buy tortillas a lot. But man, they really aren’t that healthy for you though. They are full of preservatives and other additives. So I started researching, how the heck do you make a tortilla? A lot of the recipes out there are either too difficult to make, or not as healthy as I would like them.
So, I took some ideas, and added some of my own. So, sweet potato tortillas it is!

Each tortilla contains approximately 174 calories
150 g sweet potato, mashed (3/4 cup)
130 g all-purpose flour (1 cup)
1. To a mixing bowl, add the mashed sweet potato and the flour and stir until well-combined. Use your hands to form a dough ball. It should not be too sticky.
2. Separate the dough ball into 4 equal parts. Dust your working surface with flour and roll out each tortilla with a rolling pin (they should be roughly 1/2 cm thick). Don’t make them too thin, otherwise, they won’t be as soft and flexible.
3. Place the tortillas in a hot pan over medium-high heat and cook for 1 minute on both sides. Stack the cooked tortillas on a plate covered with a clean kitchen towel while you cook the rest. This will allow them to stay very flexible.
