Vegan Lentil And Sweet Potato Bake
This  Lentil And Sweet Potato Bake is the ultimate healthy comfort food! It’s somehow so satisfying and you get complex carbs from the sweet potato and loads of protein and fibre from the lentils. This is the perfect healthy, low-calorie and high protein filling dish!

This recipe makes about 4-6 portions, so you will have a couple of meals, and you won’t have to worry about cooking for a few days! It’s easy to pack for work too!

Batch cooking is something I do every Sunday. It really makes my week so much easier, knowing I don’t have to cook when I come home from work tired from work.

Now, we are using dry lentils, so it’s important to soak them in cold water beforehand for a few hours, ideally overnight! So make sure you think ahead with this recipe!

Make sure you start by boiling your potatoes and cooking your lentils, as they will take longer than anything else. You can always leave them on the side, while you are cooking the rest of the stuff.

1.2g of peeled and diced sweet potatoes

600g of peeled and diced carrots

300g of green dry lentils ( soaked in cold water for at least a few hours )

600ml of vegetable stock

1 x 400g tin of chopped tomatoes

3 small white onioned peeled and chopped

1 red chili, deseeded and finely sliced

3 cloves of garlic peeled and minced

2 tablespoons of tomato paste

1 tablespoon of cumin

2 tablespoons of balsamic vinegar

2 teaspoons of paprika

1 tablespoon of mixed dried herbs

2 tablespoons of nutritional yeast flakes (acts as cheese substitute)

salt and pepper to taste


1. Put the sweet potato chunks in a deep pan with cold water and boil them until tender. Strain, and leave to steam off for a few minutes before mashing them with a bit of black pepper. Set aside.

2. Rinse your lentils from the soaking water, and add them in a deep pan with the vegetable stock, and simmer the lentils until al-dente ( still slightly firm to bite ) about 15-20 minutes.

3. Meanwhile, sweat down the onions in some oil in a deep frying pan until soft. Add the garlic and the chili and the tomato paste and cook for 2 more minutes.
Add the chopped tomatoes, the balsamic vinegar to the onion pan and cook for 5 more minutes.

4.  Preheat oven to 200c.
Add the lentils, the carrots, and the spices to the onion pan and combine, then transfer everything onto a deep baking dish and even the top. Spoon the mashed sweet potato evenly on top, then sprinkle the Nutritional Yeast Flakes and bake in the oven for about 20 minutes, then grill the top for 5 more minutes to crisp it up.
