These super quick and yummy No-Bake Peanut Butter Energy Bites are the perfect quick healthy fix, for your mid-afternoon slump.
This recipe makes about 15-20 medium-sized bites.
225g of peanut butter
115g of pure maple syrup
65g of coconut flour
desiccated coconut (Optional)
- Line a baking tray with parchment paper. Clear up some space in your freezer, because we will need it!
- In a medium bowl, add the peanut butter, the maple syrup, and the coconut flour. Whisk for a couple of minutes. When the mixture gets harder to stir, use a rubber spatula to fold until well incorporated. Fold until thickened. Cover bowl and freeze for 15-20 minutes.
- Remove from the freezer. Using a cookie scoop, scoop and drop peanut butter balls onto the prepared baking sheet, spaced evenly apart.
- Transfer back to the freezer to chill for 20-30 minutes, until somewhat firm.
Note 1: Bites will become firmer and less moist the next day.
Note2: You can roll the shaped balls in desiccated coconut (like I did) or in crushed nuts and even cocoa powder!
Note 3: Store These No-Bake Peanut Butter Energy Bites in an airtight container at room temperature or in the refrigerator for 1-2 weeks.
