Nutritious Middle-Eastern Bean Salad
- 1 x 400g/15oz can of cannellini beans drained and rinsed
- 1 medium-sized chopped red onion
- 1 1/3 cups/200g of cooked Broad beans or peas
- 1 medium-sized tomato chopped
- 1-2 tablespoons of olive oil
- Juice from half a lemon
- 2 tablespoons of chopped parsley
- 1/2 teaspoon of cumin
- salt to taste
- Prepare the veggies by chopping/washing them.
- Put all the ingredients together in a mixing bowl and combine. Cover the bowl and refrigerate for about 30 minutes so that the flavors develop.
