This salad is so easy to make; simply dice up your vegetables and combine them together with the rest of the ingredients, and you are done!
It’s important that you do refrigerate it for at least an hour before eating so that it ‘marinates’ with the lemon juice and oil.

Serves 2
There are approximately 325 calories per portion.

1 x 400g tin of cannellini beans drained and rinsed

1 medium-sized chopped red onion

200g of cooked Broad beans

1 medium-sized tomato chopped up

1 tablespoon of olive oil

Juice from half a lemon

2 tablespoons of chopped parsley

1/2 teaspoon of cumin

Salt to taste

Put all the ingredients together in a mixing bowl and combine. Cover with cling film and refrigerate for an hour so that the flavors develop.
