I think things really changed for me in the ‘cauliflower as the main event’ department when I made this whole roasted cauliflower and loved it. Also realizing that curry spices + cauliflower are pretty much a match made in heaven.
I like sandwiches, okay – I like quick things to grab that I can eat without much mess. Now, I found that a lot of vegan sandwiches or wraps out there in the shops, just aren’t flavoursome enough…So I said to myself, I will make a bomb vegan wrap that’s going to pack a punch with flavour and textures.

1 lb/1kg cauliflower small florets,
1 can/tin/400g of chickpeas drained, rinsed, & dried,
1 tsp each of cumin, garlic powder, smoked paprika, turmeric, coriander
1/2 tsp of salt,
1/4 tsp each of cinnamon, ginger powder, black pepper,
1/8 tsp of cayenne,
juice of 1/2 lemon
Tzatziki Sauce: – recipe –> Easy Healthy Vegan Tzatziki
In a medium bowl combine chickpeas & cauliflower.
In a small bowl combine spices, and lemon mix well.
Pour mix over veggies till everything is coated.
On a parchment-lined large baking sheet, roast chickpeas & cauliflower at 425F/200C for 25-30 Rotating
and flipping halfway through.
Meanwhile, make tzatziki sauce.
Wrap up in your favourite wrap style bread (I used a whole-wheat wrap) drizzle with tzatziki sauce. I also added pickled red onions, cucumbers, pickles, hummus, & some parsley.
