This Spiced Crispy Chickpeas & Cauliflower Wrap is an easy, healthy lunch or dinner made with curry roasted cauliflower and crispy chickpeas, fresh veggies, and a herby tzatziki sauce. This cauliflower wrap is also a great healthy meal prep option!
Like there’s just so much vegetable going on here. Now, don’t get me wrong, I like a good vegetable and I’m always up for a vegetarian dinner but sometimes it surprises me how much I can enjoy a meal that’s so full of vegetables.
I think things really changed for me in the ‘cauliflower as the main event’ department when I made this whole roasted cauliflower and loved it. Also realizing that curry spices + cauliflower are pretty much a match made in heaven.
And now this veggie wrap. It’s full of flavor and surprisingly filling. I had one for dinner and it was so good that I had another one and then felt very very full. But it was totally worth it.
Why we love this veggie wrap with curry roasted cauliflower:
- First off these bad boys are amazing for meal prep. I would highly recommend making a batch of these on a Sunday afternoon for a week’s worth of lunches.
- They’re also easy to customize depending on what you have on hand or what flavors you like. If you’d prefer different spices or to make it more or less spicy it’s so easy to do
- These vegetarian wraps are also so healthy thanks to the cauliflower, crunchy chickpeas, cucumber, spinach, and herby homemade tzatziki sauce.

1 lb/1kg cauliflower small florets,
1 can/tin/400g of chickpeas drained, rinsed, & dried,
1 tsp each of cumin, garlic powder, smoked paprika, turmeric, coriander
1/2 tsp of salt,
1/4 tsp each of cinnamon, ginger powder, black pepper,
1/8 tsp of cayenne,
1/4 cup/25ml of olive oil
juice of 1/2 lemon
Tzatziki Sauce: – recipe –> Easy Healthy Vegan Tzatziki
In a medium bowl combine chickpeas & cauliflower.
In a small bowl combine spices, oil, and lemon mix well.
Pour mix over veggies till everything is coated.
On a parchment-lined large baking sheet, roast chickpeas & cauliflower at 425F/200C for 25-30 Rotating
and flipping halfway through.
Meanwhile, make tzatziki sauce.
Wrap up in your favorite wrap style bread (I used a wholewheat wrap) drizzle with tzatziki sauce. I also added pickled red onions, cucumbers, pickles, hummus, & some parsley.
