Bring a pan with the 3 cups of water to the boil. Once water has boiled, remove from the stove top and the add oats. Stir to combine. Next add the chocolate and continue stirring until well mixed batter has thickened and chocolate melted.
Line a small 4" square cake pan or you an also use cupcake tins with parchment paper and pour in mixture. Refrigerate a few hours or overnight until firm. Once firm, remove from dish/tin and enjoy!
Dust with some cocoa powder if you like and decorate with cacao nibs.

The chocolate oat cake will keep well in the fridge for up to 3-4 days, and can also be frozen for up to a month!
