Slice the onion and mushrooms. Chop the garlic and tomatoes.
Heat the olive oil in a large saucepan on a medium heat. Once the oil is heated, add the onion, mushrooms and garlic, and fry for about 8-10 minutes, stirring occasionally.
Add the tomatoes to the pan with the paprika, tomato puree, and salt and pepper to taste. Mix to combine, then add the pasta and 500ml of hot water.
Bring the water to the boil, then lower and simmer until the pasta is just cooked. Be careful though, you don't want a mushy pasta!
Once the pasta is cooked, turn the heat off, then add the nutritional yeast flakes and herbs of choice.
Serve with fresh basil on top!
