Here is my Incredibly No-Bake Incredibly Healthy Vegan Nutella Granola Bars, that's pretty easy to make once you have got your homemade Nutella made, waiting for you to use it! These babies are gluten-free and oil-free!

Ingredients
  

  • 1 cup/295g or one batch of my Homemade Vegan Nutella (see my recipe in the notes)
  • 1 Cup/175g Pitted Dates soaked in warm water for 20 minutes then drained
  • 1 Cup/140g Almond Nuts
  • 1 Cup/150g Granola I used my homemade granola recipe ( see Notes)

Instructions
 

  • Blitz the almonds for about 3 minutes. Take the almonds out, add the soaked dried dates, and blitz Add the almond back and pulse again.
  • Press the almond crust on the bottom of 8'' loaf pan and press. Add the homemade Nutella on top and spread it evenly. Press the granola on top of the Nutella layer.
  • Refrigerate for 2 hours. Cut and serve.
  • Enjoy!

Homemade Nutella Recipe
These bars will keep well in the fridge for up to a week, or freeze for up to a month.
When crushing the almonds, take a pause now and then and scrape the side to make sure it is well processed. Also, don’t mix it for too long so that it will be like powder. You want some with a little bit of texture. Trust me it makes a better crust.
Crushing the dates can be challenging, if you are using dry ones, make sure to soak them first in water to get a bit of moisture. This will make crushing easier.
When laying the almonds and dates mixture on to the pan, it is better to use your fingers to make sure that you press it hard enough. Pressing it hard down is essential to make sure that this will stick together when they are refrigerated.
For the Nutella, it is better if you refrigerate the Nutella first for a couple of hours, this will make your Nutella a bit chewy and easy to spread evenly.
You can use whatever granola you have, if you don’t have one, you can just put some toasted oats and nuts, it will turn out so good too!
