A delicious blend of green tea and coconut, these Matcha Green Tea Energy Bites are a perfect way to perk you up!

Ingredients
  

  • 1/4 cup/25g shredded coconut unsweetened
  • 1 cup/ 125g of pumpkin seeds I used a mixture of pumpkin seeds and walnuts, simply because I freaking love nuts
  • 14 pitted dates
  • 1 Tbsp matcha green tea powder

Instructions
 

  • Blend everything together in a food processor. Blend until it stick together, and you can form a bites out of it. You may need to add 1-2 tbsp of water.
  • Shape into medium-sized bites.
