Ingredients

  • 3 heaped tbsp. of vegan butter
  • 6 tbsp. all-purpose flour
  • 4 tbsp. nutritional yeast
  • 4 1/2 cups oat milk
  • 1 teaspoon of salt or to taste
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of freshly grated nutmeg

Instructions

  • Melt your butter on low heat in a medium-sized pot. Once melted, add your flour, stir till a ball or more lumpy consistency appears. Cook the flour for a few minutes.
  • Now, slowly add your milk ( in batches, never at once, otherwise you will get a lumpy sauce) and whisk aggressively while cooking on medium-high heat (the whole process should take around 20 minutes). Stir till you’ve added all your milk and a more silky smooth sauce comes together.
  • Add the nutritional yeast, and nutmeg, and stir even more! At the last minute season to taste, remove from heat and set aside.

Notes

To avoid the sauce getting a 'skin' on top once cooling, press down some clingfilm, That should prevent it.
Once cooled, store in an airtight container in the fridge for up to 3 days.
It can be frozen too, for up to a month!
