Ingredients
  

  • 3 1/4 cups/500g of sweet potatoes
  • 2 1/2 cups/600ml of water
  • 2 medium-sized oranges
  • 1 tsp of brown sugar or coconut sugar
  • 2 tbsp of soy sauce or tamari sauce for a gluten-free option
  • 2 garlic cloves crushed
  • 1 small cinnamon stick
  • 2 star anise
  • a pinch of chili flakes
  • Salt to taste
  • To serve:
  • Black sesame seeds optional
  • Sumac optional
  • fresh parsley

Instructions
 

  • Peel the sweet potatoes and dice them into chunks. Add them in a medium-sized saucepan together with the orange zest + juice, sugar, soy sauce, sugar, cinnamon stick, star anise, salt, and chili flakes. Pour the water and bring to a boil. Simmer until the potato is tender. About 15 minutes.
  • Discard the cinnamon stick and star anise and blend the whole thing until creamy and smooth.

This soup will last for up to 3 days in the fridge.
You can easily sub the sweet potato for pumpkin or squash if you like!
