large sweet potato cut into fries

of onion powder

of garlic powder

tbsp
of dried thyme.

of paprika

of cayenne pepper

of olive oil
leave the oil out if you want this an oil-free recipe

of cornflour

Instructions
Heat oven to 200C/375F /gas 6.
Cut the sweet potato into ‘fries’, about 1cm thick, and mix with all the spices.
Toss with the oil if using, spread in a single layer on a baking tray lined with parchment, and bake for 45min-1hr, turning halfway.
Notes
Once cooled, store them in an air-tight container in the fridge for up to 3 days.
Ideally, reheat them in the oven to crisp them up.
