Easy Harissa And Herb Cauliflower Rice that can be served anytime of the year, it's refreshing, and super quick to make!

Ingredients
  

  • 1 large cauliflower
  • 1/4 bunch of fresh dill chopped
  • 1/4 bunch of fresh parsley chopped
  • 1 lemon juice and zest
  • 1/4 tsp of salt I used raw sea salt
  • 2-3 heaped tbsp of Harissa I used my homemade Harissa

Instructions
 

  • Trim off the outer leaves of the cauliflower, and the base of the stalk. Then cut it into 4, and grate it. You can grate the tender inner part too. You should be able to grate almost the whole cauliflower.
  • Transfer to a bowl, if not already, and add the rest of the ingredients. Mix well, and leave for 5 minutes in the fridge to absorb the flavors.
  • Serve and enjoy! :)

Notes

You can replace the capers with olives, and the nuts for any kind of nuts you have/like.
This salad will keep well in the fridge for up to 3 days!
