Ingredients
  

  • 1 pounds/450g mushrooms washed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce use tamari for a GF option
  • 1 tbsp garlic powder or 2 garlic cloves minced
  • 1/2 teaspoon fresh or dried thyme chopped
  • salt and pepper to taste
  • 2 tbsp fresh parlsey chopped

Instructions
 

  • Toss the mushrooms in balsamic vinegar, soy sauce, garlic powder, thyme, salt, and pepper.
  • Arrange in a single layer on a baking pan and roast in a preheated 400F/200C oven until the mushrooms are tender, about 20 minutes, mixing halfway through.
  • Serve spinkle he parlsey and enjoy!

Notes

If you have any leftovers, leave them to cool and store them in a container in the fridge for up to 2 days.
