5tablespoonsof monkfruit for a keto version or coconut sugar
¼cup/60ml of apple cider vinegar
1teaspooneach onion & garlic powder
¾teaspoonsmoked paprika
1whole cinnamon stick
2cloves
1teaspoonunrefined salt
Instructions
Add all ingredients to a medium size pot and mix well. On low heat, bring it to a simmer, place a lid on the pot, and cook for 30 minutes. Stir the ketchup every 5 minutes. You may want more sugar, or more vinegar, but trust me, these ingredient measurements should be balanced well.
After 30 minutes, remove the lid and let cook another 15 minutes open. The texture should be slightly looser than ketchup and will thicken after it cools. Remove the cloves and cinnamon stick and carefully blend the ketchup using a hand blender or blender, this will whip some air into it and make the ketchup smooth and give it more body.
Notes
Transfer the leftover ketchup to an airtight container, allow to cool, and store it in the fridge and consume within 3 weeks.
