Ingredients
  

  • 1 x 400g/15oz can of cannellini beans drained and rinsed
  • 1 medium-sized chopped red onion
  • 1 1/3 cups/200g of cooked Broad beans or peas
  • 1 medium-sized tomato chopped
  • 1-2 tablespoons of olive oil
  • Juice from half a lemon
  • 2 tablespoons of chopped parsley
  • 1/2 teaspoon of cumin
  • salt to taste

Instructions
 

  • Prepare the veggies by chopping/washing them.
  • Put all the ingredients together in a mixing bowl and combine. Cover the bowl and refrigerate for about 30 minutes so that the flavors develop.
