Ingredients

  • 1 medium sized baguette
  • 4-5 slices of extra firm tofu
  • 2 tbsp of hummus or harissa
  • 1 tbsp of soy sauce
  • 1 tsp of toasted sesame oil
  • 1/2 tsp of minced ginger
  • 1/2 tsp of minced garlic
  • 1 tsp of apple cider vinegar
  • 1 tsp of olive oil
  • 1/4 tsp of salt

Instructions

  • The tofu is marinaded with the soy sauce, sesame oil, garlic, and ginger for 20 minutes, or overnight.
  • Once you've marinaded the tofu, either pan-fry it with some olive oil or bake it in the oven at a preheated oven at 350F/180C for 25 minutes.
  • Slice/peel slices off the cucumber and carrot and dress them with vinegar, olive oil, and salt.
  • Slice the baguette lengthways, then spread the hummus or harissa on both sides. Add the cooked tofu, followed by the dressed veggies. Close the baguette, and eat up!

Notes

Best consumed right away, but you can pack it for lunch for the next day!
