of rice noodles
or any kind of noodles

whole large bok choy, sliced legnthways
steamed/boiled
THE SAUCE:
3
tbsp
runny peanut butter
or tahini
4
cloves of garlic
minced
3
tbsp
dark soy sauce
2
tbsp
chili sauce
or any spicy sauce – use only 1/2 tbsp if you don't want it very spicy

tbsp
dark brown sugar

tbsp
sesame oil
or other oil

tbsp
sesame seeds

tsp
chili flakes
OPTIONAL TOPPINGS:
Sesame seeds
Chopped spring onions
Crushed Peanuts
Instructions
Boil the rice noodles as per package instructions. Steam the bok choy too.
While the noodles are boiling, add all sauce ingredients to a bowl, and mix well.
Strain the noodles, but keep 1 tbsp of the boiling water.
Add the noodles and the tbsp of boiling water to the sauce bowl. Mix well.
Serve the noodles in a bowl, and top with the desired toppings, and the bok choy.
Enjoy!
Notes
The cooled leftovers will keep well in an air-tight container in the fridge for up to 3 days!
