- 2 1/2 cups/225g gluten-free rolled oats use certified gluten-free oats if needed
- 1/2 cup chopped/70g almonds use pumpkin seeds instead for nut-free option
- 1 tablespoon of cocoa powder
- 1 tsp of cinnamon
- Pinch of sea salt
- 1/4 cup/65g almond butter use sunflower seed butter for a nut-free version
- 1/4 cup/75g maple syrup
- 2 tablespoons water
- 1 handful of dark chocolate chips optional for extra chocolatey flavour
- Instructions
Preheat the oven to 325ºF/160C.
Combine all the dry ingredients in a large mixing bowl and set aside.
Melt together the almond butter, syrup, and water, whisking together until smooth on the stove on low heat for a minute.
Pour the wet ingredients to the dry and stir until well mixed and all the ingredients are coated.
Separate the mixture onto two baking sheets, and bake for 25-30 minutes, until the granola is starting to get crunchy. I recommend stirring and flipping it every 10 minutes to ensure even cooking.
Let cool completely then transfer to an airtight container.
Store in a cool, dry place for two weeks.
