Trim off the outer leaves of the cauliflower, and the base of the stalk. Then cut it into 4, and grate it. You can grate the tender inner part too. You should be able to grate almost the whole cauliflower.
Transfer to a bowl, if not already, and add the rest of the ingredients. Mix well, and leave for 5 minutes in the fridge to absorb the flavors.

You can replace the capers with olives, and the nuts for any kind of nuts you have/like.This salad will keep well in the fridge for up to 3 days!
