I came up with this recipe recently because I just love matcha green tea and wanted a simple snack using this amazing ingredient. And I also still have some matcha powder leftover that I wanted to use up before buying another one – so these babies came to live!
I still enjoy my matcha green tea latte every morning because it’s a perfect gentle pick-me-up without the jittery side effects of coffee.
Two-three of these Bites re a perfect mid-afternoon snack when I’m starting to drag. Or after dinner. (Just don’t eat them too late or you might be lying awake in bed later! At least that’s how I am and I’m pretty sensitive to anything with caffeine.

4-Ingredient & 5-Minute Healthy Matcha Bites
- 1/4 cup/25g shredded coconut unsweetened
- 1 cup/ 125g of pumpkin seeds I used a mixture of pumpkin seeds and walnuts, simply because I freaking love nuts
- 14 pitted dates
- 1 Tbsp matcha green tea powder
- Blend everything together in a food processor. Blend until it stick together, and you can form a bites out of it. You may need to add 1-2 tbsp of water.
- Shape into medium-sized bites.
