Easy Homemade Vegan Subway

Easy Homemade Vegan Subway – made at home, made cheap, made deliciously, and made in no time!

Today, I am sharing my version of the homemade vegan subway. It’s high on protein, and so satisfying.

I used tofu, which I marinaded in some soy sauce, ginger, garlic, and sesame oil.
I tried both fried and baked, and both options worked fine, If you are not too bothered about the fat content and calories, definitely fry the tofu in some olive oil. Alternatively, you can bake the tofu.

What Is Vegan From Subway, Anyway?

Subway has got plenty of vegan options these days, for example, vegan meatballs sub, vegan pattie sub, and all that. Even cookies!
Is the bread at subway vegan? – The majority of the bread on Subway is vegan! 9-Grain Multiseed Bread is my favorite!
However, eating at Subway can definitely come at a price. Not to mention, it’s you know, it’s a fast-food chain, it won’t be the healthiest option out there.

How To Make Vegan Subway At Home:

You will need:

1. Tofu
2. Baguette
3. Condiments (soy sauce, sesame oil, olive oil, vinegar)
4. Hummus/Harissa
5. Fresh Veggies ( Cucumber, Carrot)
6. Ginger & Garlic
7. Salt

The tofu is marinaded with the soy sauce, sesame oil, garlic, and ginger for 20 minutes, or overnight.
Once you’ve marinaded the tofu, either pan-fry it with some olive oil or bake it in the oven at a preheated oven at 350F/180C for 25 minutes.
Slice/peel slices off the cucumber and carrot and dress them with vinegar, olive oil, and salt.
Slice the baguette lengthways, then spread the hummus or harissa on both sides. Add the cooked tofu, followed by the dressed veggies. Close the baguette, and eat up!

Ingredients
  

  • 1 medium sized baguette
  • 4-5 slices of extra firm tofu
  • 2 tbsp of hummus or harissa

  • 1/2 tsp of minced ginger
  • 1/2 tsp of minced garlic
  • 1 tsp of apple cider vinegar
  • 1 tsp of olive oil
  • 1/4 tsp of salt

Notes

Best consumed right away, but you can pack it for lunch for the next day!
