These Healthy 3-Ingredient Apple & Almond Breakfast Cookies are so easy to make, taste delicious and are so filling. They are great on the go snack or breakfast.
Now adding melted chocolate on top is absolutely optional, they will still taste amazing, especially if you are having these for breakfast maybe leave the chocolate aside, but if you want to be naughty and have it as a dessert or a snack, sure add chocolate. When I baked them, they seemed a bit plain so I thought they needed something to complete them, and come on, chocolate makes everything better!

PREP TIME – 5 minutes COOK TIME – 35 minutes TOTAL TIME = 40 minutes.
Makes 8 cookies
INGREDIENTS:
3 large Apples of your choice, I used two red and one green
1 cup / 90g Rolled oats
1 cup / 150g Almonds
80g of melted dairy-free chocolate ( optional )
Method:
1. Preheat oven to 190C / 375F. Core and cube the apples.
2. Place everything into a food processor or a high-speed blender and blend for a few minutes until combined. Scoop the mixture onto a lined baking tray with parchment paper and shape cookies using your hands ( the mixture can be quite wet) I managed to get 8 cookies out of that mix.
3. Bake these cookies for half an hour or until you can see the tops go golden. Take out of the oven and leave to firm up for 10 minutes. Remove from paper and enjoy as they are or add any flourishes you like such as chopped banana or chocolate.
Store these Healthy 3-Ingredient Apple & Almond Breakfast Cookies in the fridge and enjoy within 5 days.
